Your keyboard, sound module or software produces the sound, and that is exactly what lets you change everything afterwards. If you want a ready-to-play audio file, choose the MP3 version of the same title.
Yes on the MIDI file, with no loss of quality: transpose, slow down, speed up, remove or replace an instrument, print the score of a single track. Nothing is frozen into a recording. The MP3, by contrast, is fixed: its key and tempo cannot be changed.
They are sound-bank standards. GM (General MIDI) is universal: 128 instruments recognised by every device. XG is Yamaha's extension, GS is Roland's, GM2 a shared evolution. Each adds its own sounds and settings. When in doubt, the GM version works everywhere.
